Slice the tops off the bell peppers and remove the seeds and membranes.
In a mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, ground cumin, smoked paprika, garlic powder, onion powder, and half of the shredded cheese.
Season the mixture with salt and black pepper to taste.
Stuff each bell pepper with the quinoa mixture, pressing down gently.
Top each pepper with the remaining shredded cheese.
Place the stuffed peppers in the air fryer basket with space between them.
Cook in the air fryer for 12-15 minutes until tender and cheese is melted.
Carefully remove the stuffed peppers from the air fryer.
Garnish with fresh cilantro leaves if desired before serving.
