2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, finely diced

2 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1 fresh lime, juiced

1/4 cup fresh cilantro, chopped (optional)

Salt and black pepper, to taste

Start by placing the boneless chicken breasts evenly in the bottom of your crockpot. This will serve as the base for the dish.

    In a medium mixing bowl, combine the rinsed black beans, drained corn, diced tomatoes (with their juice), finely diced onion, and minced garlic.

      Season the mixture with ground cumin, chili powder, smoked paprika, fresh lime juice, and a pinch of salt and pepper. Stir thoroughly until all ingredients are well incorporated.

        Carefully pour the mixture over the chicken in the crockpot, ensuring the chicken is fully covered for even flavor distribution.
