as neededSlices of tomato or cucumber, for serving (optional)
Instructions
In a medium-sized mixing bowl, use a fork or potato masher to mash the chickpeas until they are chunky, ensuring they still have some texture—not completely smooth.
Add the plain Greek yogurt, curry powder, ground turmeric, garlic powder, and ground ginger to the mashed chickpeas. Mix thoroughly until all ingredients are well combined.
Gently fold in the finely chopped red onion, diced celery, grated carrot, raisins (if using), and the chopped cilantro or parsley. Stir until everything is mixed evenly.
Season the chickpea mixture with salt and pepper to taste. Feel free to adjust the quantity of spices or yogurt based on your personal preference for flavor and creaminess.
For added crunch, lightly toast the slices of bread if desired.
Generously scoop the curried chickpea salad onto two slices of bread. Top with fresh lettuce leaves, and add slices of tomato or cucumber if you like for extra freshness.
Cap the sandwiches with the remaining slices of bread. For a delightful presentation, cut the sandwiches diagonally before serving.
Notes
Serve the sandwiches on a vibrant plate alongside a side of fresh fruit or a small green salad. For a finishing touch, garnish each sandwich with a sprig of cilantro or parsley for an appealing look.
