2cupsmixed fresh berries (such as strawberries, blueberries, and raspberries)
1poundsponge cake, cut into bite-sized cubes
2cupswhipped cream (either homemade or store-bought)
1cupvanilla custard (preferably homemade, but store-bought works too)
1tablespoonhoney or maple syrup
1teaspoonpure vanilla extract
to tastefresh mint leaves, for garnish
Instructions
In a medium mixing bowl, gently combine the mixed fresh berries. Drizzle with honey or maple syrup and toss lightly to coat the berries evenly. Set aside for about 10 minutes to allow the natural juices to develop as they macerate.
If making homemade custard, prepare according to your favorite recipe and allow it to cool completely before use. If you opt for store-bought custard, let it sit at room temperature for a while to ensure easy layering.
In a large glass trifle bowl or individual serving cups, start by adding a layer of sponge cake cubes at the bottom, ensuring an even layer for a stable base.
Spoon a generous layer of vanilla custard on top of the sponge cake, smoothing it out gently with the back of a spoon for an even layer.
Next, carefully add a layer of the macerated berries, ensuring they are spread evenly over the custard for optimal flavor in every bite.
Add a lavish layer of whipped cream over the berries, using a spoon to smooth it out nicely for a beautiful finish.
Continue layering (sponge cake, custard, macerated berries, whipped cream) until you reach the top of your serving vessel. The final layer should be a fluffy layer of whipped cream. Reserve a few berries for decorative garnish.
Cover the assembled trifle with plastic wrap and place it in the refrigerator to chill for at least 1 hour.
Just before serving, decorate the top of the trifle with the reserved berries and sprinkle with fresh mint leaves for an elegant touch.
