to tastefresh parsley, finely chopped (for garnish)
Instructions
Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a medium mixing bowl, add the rinsed chickpeas. Use a clean kitchen towel or paper towels to dry them thoroughly; this step is crucial to achieving that desired crispy texture.
In a separate mixing bowl, combine the honey, olive oil, minced garlic, smoked paprika, salt, and black pepper. Whisk these ingredients together until they form a cohesive and flavorful mixture.
Pour the honey-garlic mixture over the dried chickpeas. Gently toss the chickpeas in the mixture until they are fully coated, ensuring every chickpea is deliciously flavored.
Spread the coated chickpeas in a single layer across the prepared baking sheet. Make sure they have enough space to roast evenly.
Place the baking sheet in the oven and roast the chickpeas for 25-30 minutes. Halfway through the cooking time, shake the pan gently to ensure even roasting. Your chickpeas should turn a lovely golden brown and become crispy.
Once roasted, remove the baking sheet from the oven and allow the chickpeas to cool for a few minutes. Remember that they will continue to crisp up as they cool.
Before serving, sprinkle the roasted chickpeas with finely chopped fresh parsley for a pop of color and freshness.
Notes
For an inviting presentation, serve in a rustic bowl with extra parsley and a drizzle of honey.
