1 pre-made pie crust (store-bought or homemade)

1 cup fresh spinach, chopped

1 medium zucchini, diced

1 red bell pepper, diced

1/2 cup cherry tomatoes, halved

1/2 cup mushrooms, sliced

4 large eggs

1 cup whole milk

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper to taste

Begin by preheating your oven to 375°F (190°C).

    Carefully place the pie crust into a 9-inch pie dish. Use a fork to prick the bottom of the crust to prevent it from bubbling during baking. Pre-bake the crust in the oven for about 10 minutes, then remove it and set aside to cool slightly.

      In a skillet set over medium heat, add the diced zucchini, red bell pepper, and sliced mushrooms. Sauté for approximately 5-7 minutes, or until the vegetables are tender. Add the chopped spinach and cook just until wilted, about 1-2 minutes. Remove the skillet from heat and let the vegetables cool slightly.

        In a large mixing bowl, crack the 4 large eggs and whisk them together with 1 cup of whole milk, 1 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, and a pinch of salt and pepper. Whisk until the mixture is smooth and well combined.

          Fold the sautéed vegetables and 1 cup of shredded cheese into the egg mixture, ensuring everything is evenly distributed throughout.

            Pour the flavorful vegetable and egg mixture into the pre-baked pie crust, spreading it out evenly so each slice will have a generous portion of veggies.
